I recently chatted with my friend Kathryn about our shared mission to help you walk into your marriage in the best shape of your life AND set you up with sustainable habits going forward — including everything from hair and makeup, to eating healthy and exercising.

She is a strong believer in the importance of meal prepping, and wants you to be as healthy as possible for your wedding — so she’s sharing a tasty recipe with us.

Below, find her simple meal prep recipe for roasted salmon with broccoli and quinoa. 

Easy Meal Prep Recipe

Meal prep doesn’t have to be time-consuming or use every pot and pan in your kitchen. This meal prep can be done in less than 30 minutes and provides you with multiple meals for the whole week!

Salmon is rich in omegas, which are both anti-inflammatory and a great source of protein. Protein supports muscle recovery and warms up your core temperature as it digests, which burns calories without you doing a thing. 

Quinoa also contains protein, as well as all 9 essential amino acids, and is one of the best carbs you can consume.

I like to prep this on Sundays when I get home from the gym. I take containers and divy it up into ~3 meals. You can warm these meals up and then add something as simple as teriyaki sauce before enjoying!

Without further ado, here’s the recipe:

Preheat the oven to 400. Take a head of broccoli and chop into florets. Take the broccoli and place in a bowl with avocado oil, Dash sodium-free seasoning, and Trader Joe’s Everyday seasoning. Mix well and spread onto a baking sheet lined with parchment paper. Set aside until the salmon is prepared. 

Take a large filet of salmon, season with Dash sodium-free seasoning, and place on a parchment paper-lined baking sheet. Place both salmon and broccoli into the oven on separate racks and cook for 12-15 minutes.

Measure out a cup of quinoa and place into a pot with one cup of water. Cook until done, according to package directions.
